Fruity tomato and peach salad
Wash the orange thoroughly and grate the peel to obtain zest. Squeeze out the juice.
Mix the orange juice, zest, soy sauce, oil and honey to make a dressing. Season with salt and pepper to taste. Wash the tomatoes and halve or slice them, depending on their size. Wash the peaches too, cut in half, remove the seeds and cut into wedges. Cut the cucumber into thin strips using a peeler.

Wash and dry the rocket and spinach leaves thoroughly. Arrange the tomatoes, cucumber and peaches on a large serving platter and drizzle with the dressing. Sprinkle over the grated Regato cheese and season with salt and pepper to taste.
