Smart tortellini and salmon casserole

Prepare the tortellini according to the packet instructions and drain. Meanwhile, cut the salmon into large pieces. Peel and chop the shallots and garlic cloves. Wash the spinach thoroughly. Heat the butter in a pan and sauté the shallots and garlic until translucent. Add the washed spinach and sauté briefly. Remove the pan from the heat. Preheat the oven to 180°C top/bottom heat. In a bowl, whisk the eggs and stir together with the vegetable stock and cream until smooth. Season the mixture with salt and pepper to taste. In a greased baking dish, mix the tortellini, spinach and salmon. Pour the egg and cream mixture over the top and sprinkle with the grated pepper jack. Bake the dish in the preheated oven for about 30 minutes until golden brown.

Garnish with dill sprigs at the end and enjoy hot. Enjoy your meal!
